GRANA PADANO
Grana Padano DOP by Zanetti is a raw, hard, cooked-paste cheese from the Po River Valley in Northern Italy, produced from bovine milk mainly of Italian Friesian, Brown Cow, Red Cow, and White Modenese breeds. It undergoes natural creaming, precise fat-to-casein ratios, and is coagulated with traditional calf rennet and lysozyme to prevent spoilage from silage-fed cows' milk. Aged 9 to 24+ months, it has a granular, flaky texture with tyrosine crystals and evolving flavor from sweet cream to intense umami. Zanetti is a leading producer, exporting worldwide, with specific maturation categories and pairing suggestions for wines, beers, and foods.
