Produced at the Old Irish Creamery in Effin, it is aged 10–12 months using vegetarian microbial rennet. The cheese features distinctive marbled veins from Irish porter infusion, offering a savory, malty, tangy flavor and a firm, smooth, and friable texture. Quality is ensured by strict standards including Bord Bia's SDAS. It pairs well with Zinfandel, Rioja, stout beers, and charcuterie.
